Pick-Up Porridge Bars

Ingredients
- 40 g/1½ oz porridge oats
- 175ml/ 6fl oz whole milk or milk of choice
- 15g 1/2oz raisins or other dried fruit, very finely chopped
- 1/2 teaspoon ground cinnamon
- 1 teaspoon ground mixed seeds
- 10 g/¼ oz unsalted butter
Method
- Line a small baking tray with baking parchment. Place the oats + milk ina small saucepan + bring to the boil, then reduce the heat + simmer for 8 minutes, stirring frequently, or until the oats are very soft + mushy-it should be a thick porridge consistency
- Transfer to a bowl + stir in the raisins, cinnamon and seeds, then spread out the porridge on the prepared baking sheet in an even layer about 1cm/1/2 inch thick. Cover and chill for 30 minutes or until set.
- Cut the porridge into 6 fingers each 7 cm/2¾ inches long by 2.5 cm/1 inch wide.
- Melt the butter in a large, nonstick frying pan and cook the fingers for 3 minutes on each side or until golden. Leave to cool slightly before serving.
Fun For Little Ones
Older little ones can help to spread the porridge out + flatten it down into the baking tray.
