Ingredients

  • 40 g/1½ oz porridge oats
  • 175ml/ 6fl oz whole milk or milk of choice
  • 15g 1/2oz raisins or other dried fruit, very finely chopped
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon ground mixed seeds
  • 10 g/¼ oz unsalted butter

Method

  1. Line a small baking tray with baking parchment. Place the oats + milk ina small saucepan + bring to the boil, then reduce the heat + simmer for 8 minutes, stirring frequently, or until the oats are very soft + mushy-it should be a thick porridge consistency
  2. Transfer to a bowl + stir in the raisins, cinnamon and seeds, then spread out the porridge on the prepared baking sheet in an even layer about 1cm/1/2 inch thick. Cover and chill for 30 minutes or until set.
  3. Cut the porridge into 6 fingers each 7 cm/2¾ inches long by 2.5 cm/1 inch wide.
  4. Melt the butter in a large, nonstick frying pan and cook the fingers for 3 minutes on each side or until golden. Leave to cool slightly before serving.
